Gingerbread Cookies

Ingredients

• 3 cups all-purpose flour
• ¾ cup brown sugar
• ½ cup unsalted butter, softened
• ½ cup molasses
• 1 egg
• 1 tsp baking soda
• 1 tbsp ground ginger
• 1 tbsp ground cinnamon
• ½ tsp ground cloves
• ½ tsp salt

Directions

1. Cream butter and sugar. Beat in egg and molasses.
2. Whisk flour, baking soda, spices, and salt. Add to wet ingredients.
3. Chill dough 1 hour. Roll out, cut shapes.
4. Bake at 350°F (175°C) for 8–10 minutes. Cool before decorating.

Mulled Wine

Ingredients

• 1 bottle red wine
• 1 orange, sliced
• ¼ cup brandy (optional)
• ¼ cup honey or sugar
• 3 cinnamon sticks
• 4 cloves
• 2 star anise
• 1 tsp allspice

Directions

1. Combine wine, orange slices, honey, and spices in a pot.
2. Heat gently for 20–30 minutes (do not boil).
3. Add brandy if desired. Serve warm in mugs.

Mince Pies

Ingredients

For the Filling:
• 2 cups dried fruit (raisins, currants, cranberries)
• ½ cup chopped apple
• ½ cup brown sugar
• ¼ cup brandy or orange juice
• 1 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp allspice

For the Pastry:
• 2 cups flour
• ½ cup butter
• ¼ cup sugar
• 1 egg
• Pinch of salt

Directions

1. Combine filling ingredients in a saucepan. Simmer until thickened.
2. Make pastry by cutting butter into flour, sugar, and salt. Add egg to form dough.
3. Roll pastry and cut circles. Press into muffin tin.
4. Spoon filling into cases. Top with pastry stars or lids.
5. Bake at 375°F (190°C) for 20–25 minutes.

Spiced Nuts

Ingredients

• 3 cups mixed nuts (almonds, pecans, walnuts)
• 1 egg white
• ½ cup sugar
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ tsp cayenne pepper (optional)
• Pinch of salt

Directions

1. Beat egg white until frothy. Toss nuts in egg white.
2. Mix sugar, cinnamon, nutmeg, cayenne, and salt. Coat nuts with mixture.
3. Spread on baking sheet. Bake at 300°F (150°C) for 25–30 minutes, stirring once.
